Lemon Tahini Herb Dressing 

This quick and easy 5 minute lemon tahini herb dressing is fresh, tangy, creamy, and super versatile. I whip up a batch and use it to drizzle on salads, sandwiches, wraps, roasted veggies, or even use it as a dipping sauce all week long. It makes eating more vegetables easy, dare I say, even fun! It’s made with simple healthy ingredients and it lasts for up to two weeks stored in the fridge.

Here are several reasons why adding these ingredients to your diet is a healthy idea.

Tahini– Made from toasted, ground sesame seeds. It has creamy, nutty, earthy flavors. Rich in healthy fats, protein, and fiber, as well as calcium, selenium, and iron.

Garlic– Contains compounds with potent medicinal properties. It can protect against illness, including the flu, and the common cold. Garlic can reduce blood pressure, and improve cholesterol levels, just to name a few of its many benefits. It also makes everything taste better in my opinion!

Lemon– is loaded with antioxidants including vitamin c, potassium, and vitamin B6. They are great for heart health and help guard against anemia. The vitamin c in lemons can help with the absorption of iron from other foods. The peel, which is often overlooked, may prevent cancer, and may have antimicrobial, and antifungal properties too. If you have never given it a try…experiment a little. I think you will be surprised how delicious and flavorful lemon peel (especially meyer lemon peel) can be.

Let’s make it…

List of ingredients:

  1. 1 cup extra virgin olive oil
  2. 2 tablespoons tahini
  3. 1 teaspoon Dijon mustard
  4. ½ cup fresh herbs…I like to use dill and thyme, but parsley, basil, chives, mint, or cilantro are great options too.
  5. Garlic. I use a whole head, not a clove, a head! I love lots of intense garlic flavor and all of the health benefits that come from it too. If you do too, add as much as your taste buds enjoy.
  6. Juice of one lemon and some lemon zest…If possible, get your hands on a meyer lemon. Using a meyer lemon and some of the peel takes this recipe to the next level!
  7. Salt and pepper to taste

Add all of the ingredients to a food processor and simply blend until creamy. If you wish the dressing to be thinner you can add one tablespoon of water at a time until you reach your desired consistency. Store in the refrigerator in a glass container for up to two weeks. Give it a little shake before each use. I love this stuff…I hope you do, too
