Sesame Carrot Salad 

This colorful, delicious, easy-to-make salad is an ideal side dish for Easter or Passover, or anytime the menu calls for something light and refreshing. Sweet, crunchy carrots pair perfectly with sesame oil and lime. This is a versatile recipe that can be enjoyed plain or with toppings. Sesame carrot salad is crunchy, fresh, and easy to throw together in a matter of minutes. The Asian inspired dressing coats the carrots to make a light, nutritious, vibrant, and super refreshing salad that I’m sure you will come back to time, and time again. 

Carrots are a good source of fiber, antioxidants, and several vitamins and minerals. There is even a possibility that they can help balance hormones if eaten regularly. I think we could all use a carrot or two added to our diet everyday… Maybe this carrot salad is exactly what you need to help you to do that. 

I love this raw carrot salad! The texture is amazing, the flavor is just right, and the color is so pretty. Give it a try… you won’t be disappointed.

Ingredients:

  1. 3 large carrots
  1. 3 tablespoons sesame oil
  1. 2 tablespoons soy sauce or coconut aminos
  1. 1 tablespoons rice wine vinegar or apple cider vinegar
  1. 1 tablespoon maple syrup (optional)
  1. Juice of 1 lime
  1. Salt to taste
  1. Optional extras: chopped up cilantro, green onions, toasted sesame seeds, red pepper flakes

Salad Time:

There are two ways of doing this…the easy way…Using a food processor, grate 6 large carrots. The harder way, but definitely worth it for the textural qualities achieved…thinly shave your carrots using a hand peeler… shave them into long thin strips. This takes a bit more time, and effort, but makes the recipe even better. Next simply add the sesame oil, soy sauce or coconut aminos, and either the rice wine vinegar for a sweeter salad or, apple cider vinegar for a more tart salad, maple syrup (optional), and the juice of 1 lime to your carrots, and mix well. Once the carrots are well coated in the dressing, adjust the salt to your liking. Some great additions to this salad would be some chopped up cilantro, chopped up green onions, toasted sesame seeds, and red pepper flakes. If you make this salad the hard way (which I highly recommend) …shaving thin strips of carrot using your hand peeler…It is best enjoyed fresh right after it is made. Once the carrots are coated in the dressing, they will soften, and eventually lose their crunch. If you are fine with a bit more soggy salad, this version can be stored in an airtight container in the fridge for 3-4 days. The grated version of this recipe will not become as soggy as quickly as the shaved version, and can be stored in an airtight container in the fridge for 3-4 days also.

Enjoy this quick and easy to make carrot salad. It adds a wonderful orange pop of color to your plate, and tastes great.
