Making a batch of homemade dressing can be an easy hack on how to get yourself to eat more veggies throughout the week. When you have a delicious dressing all ready to go, it can get you excited about throwing together a quick salad. This dressing is not only great for salads, so don’t be afraid to try it as a sauce on your fish tacos, over roasted vegetables, on a pasta salad, as a veggie dip, or drizzled over a sweet potato and black beans…Yum yum yum. The tahini in this dressing makes it nice and creamy without adding any dairy. However, it can also make it slightly bitter, so if you’d like to add a little bit of maple syrup, be my guest. If you haven’t been making your own homemade dressings yet, this is your sign to start. It’s super easy to make and will be better for you than any other bottled dressing you can buy. Give it a try.

Ingredients:
- ¼ cup packed fresh cilantro (stems are fine to use too)
- 4 tablespoons olive oil
- 2 tablespoons tahini
- Juice from 1 1/2 limes
- 2 cloves of garlic
- ¼ cup water
- Salt to taste approx… ½ teaspoon
- 1/2-1 teaspoon maple syrup- optional
Dressing time…
Simply add all the ingredients except for the maple syrup, to a high-speed blender, and blend until creamy, and smooth. Take a little taste, and decide whether it’s just right, or if it’s a little too bitter. If it is a bit bitter, add the maple syrup a little at a time, until it is to your desired liking. Store in an airtight jar, in the fridge for 4-5 days. Give it a little shake before using.
This dressing is creamy, zesty, and full of antioxidants. You can actually see the nutrients in the color of the dressing. Cilantro is a powerhouse of an herb that has so many health benefits.
